Easy Ground Beef and Shiitake Mushroom Rice

Ground beef and mushroom rice is a simple one-bowl meal that is easy to make and nutritious. This is a great dish for young children and a common comfort food for Chinese families. This was a favorite of mine growing up. This is primarily made with ground meat, shiitake mushrooms, oyster sauce and soy sauce. Variations of this is made with ingredients such as with tomato, other ground meats, scallions, and onions.

Ingredients

  • 2 cups short grain sushi white rice

  • 1/2 tablespoon olive oil

  • 2 tablespoons minced garlic

  • 1 pound ground beef

  • 4 ounces sliced shiitake mushrooms fresh or dried

  • 2 tablespoons Shaoxing rice wine

  • 3 tablespoons soy sauce

  • 4 tablespoons oyster sauce

Directions

  • Wash 2 cups of rice with water, drain, and then add 3 cups water to rice. Begin cooking rice in rice cooker or pot (click to see “how to cook white rice” instructions).
  • Once you have the rice starting to cook, wash and chopped shiitake mushrooms into small pieces.
  • Add olive oil to a non-stick pan or wok. Wait for oil to heat slightly and then add minced garlic. Stirfry garlic until it releases some aroma. Add ground beef and stir-fry until all browned. Add chopped shiitake mushrooms and mix until well combined.
  • Add Shaoxing rice wine, soy sauce, and oyster sauce. Mix until well combined. Cover and turn off heat.

  • Once rice is done cooking, add meat and mushroom mixture into rice pot and combine together well. Add 1 more tablespoon of soy sauce and mix again. Cook for another 10 minutes in the rice cooker or pot. Scoop out and serve.

Notes

  • This is a versatile recipe: You can substitute ground beef with any ground meat such as ground pork, ground veal, ground chicken, or ground turkey.
