Mango Pudding is a very popular gelatinous dessert.

Ingredients

  • 3/4 cup water chilled

  • 2 mangoes

  • 1 1/4 cup boiling water

  • 2 tablespoons unflavored gelatin

  • 3/4 cup sugar

  • 1/4 cup 2% milk

  • 1/4 cup heavy cream

  • 1 tablespoon lemon juice

Directions

  • Place 3/4 cup of water into a bowl into the freezer to chill.
  • Peel and dice mangoes. Puree 1/4 of the diced mango, milk and heavy cream. Add lemon juice and blend some more. Set diced and cream mango puree aside.
  • Boil 1 1/4 cups of water. Pour into a heat resistant bowl. Slowly add gelatin while stirring. Stir until all melted. Slowly add sugar while stirring until all dissolved.
  • Slowly add cream mango puree while stirring. Add diced mango and stir to mix. Remove bowl of water from freezer and add to mixture.
  • Pour into individual small 1/2 cup sized ceramic or glass bowls. You will probably need about 8 of them. Place in refrigerator to chill for 3 hours or until firm. Serve.

Notes

  • Optional: Drizzle some evaporated milk on top for some creaminess.
