Ingredients

  • Pork rib marinade
  • 1 rack pork ribs

  • 1 tablespoon cornstarch

  • 1 tablespoon Shaoxing wine

  • 1/2 teaspoon salt

  • 2 tablespoons olive oil

  • Prepare to cook
  • 1/4 cup additional cornstarch

  • 1/2 cup canola oil

  • 5 cloves chopped garlic

  • 1 red pepper finely sliced

  • 2 teaspoons pepper salt (combine and mix together 1/2 teaspoon salt and 1 teaspoon white pepper and 1/2 teaspoon black pepper)

Directions

  • Cut rack of pork ribs into individual ribs. Marinate by combining cornstarch, salt, olive oil, and Shaoxing rice wine for 10 minutes. Then add 1/4 cup of additional cornstarch and mix to coat all ribs evenly. Set aside.
  • Heat canola oil in wok over medium heat. Add chopped garlic and red peppers. Remove garlic and red peppers from oil once garlic edges brown and place on paper towel lined small bowl.
  • With wok oil still heated, add 3-4 ribs at a time to fry. Keep ribs separated while frying, so they don’t stick together. Turn ribs to fry each side after coating is lightly browned (approximately 2 minutes on each side). Remove from oil and place on paper towel lined plate to drain excess oil.
  • After all ribs are fried, transfer ribs to serving dish. Sprinkle 1/4 of the pepper salt mixture evenly over ribs, mix and sprinkle another 1/4. Reserve remaining pepper salt to serve at table for additional sprinkling to taste for individuals. Sprinkled fried garlic and red peppers on top of ribs and serve.
