Ingredients

  • 1 cup boiling water

  • 1/4 cup dried wood ear mushrooms

  • 10 dried shiitake mushrooms

  • 1 pound boneless chicken thighs

  • 1/4 teaspoon sesame oil

  • 1 teaspoon Shaoxing rice wine

  • 1 tablespoon oyster sauce

  • 1 tablespoon olive oil

  • 1/4 teaspoon sugar

  • 3/4 teaspoon salt

  • 1/4 teaspoon white pepper

  • 1/2 teaspoon ginger chopped

  • 1 scallion chopped into 2 inch pieces

  • 1 tablespoon cornstarch

Directions

  • Boil 1 cup water. Put wood ears in small bowl and pour in boiling water until submerged. Put dried mushrooms in small bowl and pour in boiling water until submerged. Let soak for 15 minutes or until all soft. Cut off mushroom stems and wash wood ears. Chop wood ears to 1 inch pieces. Cut mushrooms into quarters. Set aside.
  • Chop chicken thighs into 1 inch pieces and place in bowl. Add rice wine, oyster sauce, cornstarch, sesame oil, sugar, salt, white pepper, and ginger. Mix well until liquid absorbed by chicken. Add mushrooms and wood ears and mix.
  • Boil water in steamer. Transfer chicken mixture to a steamable plate and place scallions on top. Place dish in steamer and steam for 15 minutes.
  • Carefully remove from steamer and serve.
